It’s fermented in a way to get a good flavor and tannin extraction, but still retaining a clean and vibrant expression of wild, Norwegian blueberries. The fresh, saturated blueberry flavor is quickly followed by a flowery and caramelly honey character, before the tannins from the berries ties it all together.
