For this Druif, we macerated Pinot Gris grapes from Harth+Harth for five months on a foeder and let a part of the fruit lambik mature further on a smaller oak barrel. We used two-and three-year old lambikken only, rendering the weighted average age of the blend to more than 39 months on the moment of bottling. More than 60% the cereals were sourced in a 15 km radius around the brewery.
A few years ago, we started working with the most progressive low-intervention winemakers around Europe. Harth+Harth is a family-owned Demeter-certified organic winery from Saulheim in the German wine region of Rheinhessen.
