For this geuze, we matured two-year-old lambik for almost two years on a freshly
emptied ratafia barrel from our friend Jean-Marc Sélèque. Ratafia is a sweet
liqueur based on Champagne pressings (50% Chardonnay, 40% Meunier, 10% Pinot
Noir), with 35% of the base from 2021 plus 65% perpetual reserve wine started in
2010. The resulting ratafia geuze has a weighted average age of over 47 months.
