This year’s magnum is flled with a great blend of wild ales, aged for 1,2 and 4,5 years in oak barrels. In the nose youwill fnd almost creamy Chardonnay notes and some miner.ality together with slightly sweaty notes (in a good way). Thetaste is quite balanced. Salted lemons, dry apple skin, herbslike laurel and thyme, a hint of oak and hoppy notes whichgive off a sweetness of sorts. The beer is perfectly drinkablebecause of the pronounced bitterness and dry tannins andinteresting structure of the blend: it lacks a bit of backbonewhich actually helps to create a kind of open space in agood way.
Nothing in the world is as soft and yielding as water.Yet for dissolving the hard and inflexible, nothingcan surpass it.
The soft overcomes the hard; the gentle overcomesthe rigid. Everyone knows that is true, but few canput it into practice.
Therefore the Master remains serene in the midst ofsorrow,Evil cannot enter his heart. Because he hasgiven up helping, he is people’s greatest help.
True words seem paradoxical
