For this PX geuze, we matured young lambik for another ten months on three small and very special barrels from Ximénez-Spinola. This is the only bodega in the sherry region that works with Pedro Ximénez grapes, vinifying wines from extra dry to sweet and all subtle oxidised sherry variants in between. This is a blend of three X-S barrels showcasing the subtle essence of this bodega and traditional lambik. Weighted average age at bottling: 21 months. 100% 3 Fonteinen.
